Chicken Salad Stuffed Peppers

Mini Peppers
Chicken Salad

Slice mini peppers in half. Clean out seeds and stuff with chicken salad. Serve.

Satisfies my craving for something crunchy.


Chicken Salad

2 Chicken Breast
SF Sweet Relish
Celery
Low Fat Mayo
Splenda
Salt & Pepper

Cube up chicken breast. Dice up celery. Mix all ingredients together.

Squash Zucchini Onion Chicken Marinara

2 small Yellow Squash, cubed
2 small Zucchini, cubed
1 small onion, cubed
5 Mushrooms, sliced
2 Chicken Breast, skinless & boneless, cubed
3 Garlic Cloves, diced
1 Jar of Marinara Sauce
Salt, Pepper

Cook cubed chicken up in Olive Oil or Avacado Oil until done. Set aside. Sautee Squash, Zucchini, Onion & Mushroom until cooked to the desired softness. I like mine with a little more bite. In other words, I don't want my stuff mushy.
Mix Chicken & Vegetables together and pour Marinara Sauce over and mix together. Top with low-fat cheese when serving.

Ginger Soy Kielbasa with veggies

Ginger Soy Kielbasa with veggies

1 Kielbasa cut up
2 cloves of garlic, peeled & chopped
1 T olive oil

In a heated pan put olive oil, garlic & kielbasa. Cook until thoroughly heated.

Chop up:
Onions
Yellow Squash
Zucchini
1 T. Olive Oil

Put all in a heated pan. Cook until vegetables halfway through. Add meat.

Peel & cut up fresh ginger or use powdered. Add Soy Sauce & ginger to the pan with veggies and let simmer for a while. Serve over rice or riced cauliflower.

Cheesy Cauliflower Rice

Cheesy Cheesy Riced Cauliflower

3-1/2 cups of riced cauliflower
1 T Butter
1 teaspoon of garlic powder chopped garlic
3-3/4 T cream cheese
1-3/4 cups of grated cheddar cheese or grated low far mozzarella cheese
1/4 cup of evaporated milk or fair life or any low-fat milk to make it less fat
1/2 t salt
1/2 t pepper

Instructions
1. In a large pan, melt butter. Stir in garlic and riced cauliflower on medium heat.
2. Continue to cook cauliflower for about 7 minutes until its less white & tender
3. Turn down the heat and stir in cream cheese, cheese & milk until melted & combined.
4. Serve immediately

Bariatric Recipes

I'm going to start posting some bariatric recipes here starting tomorrow.

Mashed Cauliflower

1 head of Cauliflower, washed & cut up

Place cut up cauliflower in a pot with a couple of inches of water.
Bring to a boil. Drain GOOD. Mash with a masher or with a mixer.
Add Parkay spray butter, pepper, lite sour cream and a little 2% milk or another low-calorie milk substitute. You can also add low-fat cheese or lite cream cheese. Just be careful about adding cream cheese & milk. It may become too loose. Add salt to taste. Mix until creamy.
