Chicken Salad Stuffed Peppers

Mini Peppers
Chicken Salad

Slice mini peppers in half. Clean out seeds and stuff with chicken salad. Serve.

Satisfies my craving for something crunchy.


Chicken Salad

2 Chicken Breast
SF Sweet Relish
Celery
Low Fat Mayo
Splenda
Salt & Pepper

Cube up chicken breast. Dice up celery. Mix all ingredients together.

Squash Zucchini Onion Chicken Marinara

2 small Yellow Squash, cubed
2 small Zucchini, cubed
1 small onion, cubed
5 Mushrooms, sliced
2 Chicken Breast, skinless & boneless, cubed
3 Garlic Cloves, diced
1 Jar of Marinara Sauce
Salt, Pepper

Cook cubed chicken up in Olive Oil or Avacado Oil until done. Set aside. Sautee Squash, Zucchini, Onion & Mushroom until cooked to the desired softness. I like mine with a little more bite. In other words, I don't want my stuff mushy.
Mix Chicken & Vegetables together and pour Marinara Sauce over and mix together. Top with low-fat cheese when serving.
